What do I need for making my own gluten free flour mix?

​The all-rounder gluten free flour needs both starch and protein so you need take elements from a few flours. Try blending 1kg of rice flour with 1/2kg of potato flour and 1/4kg of tapioca flour.

Each type of baking - from breads to cakes to cookies - will benefit from a a more customised blend and some gluten free flours like chickpea (gram) have a strong flavour so you need to limit them. For more info read our GF baking blog
