Easy couscous

Method

  1. Add couscous into a heatproof bow containing the hot stock.
  2. Stir, cover the bowl and leave for 5 minutes.
  3. This is a good time to toast the pine nuts.
  4. Whisk together the dressing ingredients, season with salt and pepper.
  5. Throw the chopped peppers, carrots, pine nuts, spring onions into the bowl and the dressing and stir it all together. And
  6. Add any of the optional extras you like the sound of.  The more the merrier with this one. Season to taste.
  7. Serve warm or cold as a side dish for a buffet or barbecue.

Recipe Notes

  • You can make this a day ahead and keep it in the fridge - perfect for a busy buffet or barbecue.
  • To make this gluten free, simply use maize couscous - available in most big supermarkets.
  • Serve as a side dish with barbecued food (it lasts really well in hot weather) or with Morrocan dishes like chicken tagine or harissa lamb.
