Feta and apricot couscous salad

Method
- Put the couscous in a large bowl and pour over the stock. Cover with a plate and leave it to steam for 5- 10 minutes (check pack instructions). Once all the water has been absorbed, add the olive oil and break up the grains with a fork.
- Fry the almonds gently in a small frying pan until golden. Stir regularly as they burn really easily.
- Add in the almonds, apricots, feta cheese (and rocket and red onion) to the couscous, season with salt and pepper, mix and serve.

You can play around with this recipe too – you could chop up some red/yellow peppers into it, or fry up some bacon to add to it.
