Lavender lamb

Method

Legs of lamb vary in size. I have put that this recipe serves 6 but a massive leg of lamb it may do more. Leftovers can be turned into an easy Shepherd's Pie.

  1. Chop the onion & lavender flowers finely, combine with other marinade ingredients. (I stick it all in the food processor).
  2. Spread marinade over both sides of the butterflied leg of lamb and leave to marinate for at least 4 hours or overnight preferably.
  3. You can cook this on the bbq, or put in the oven at 220 deg C / fan oven 200 deg C and cook it for around 15 minutes per pound (or per 450g).
  4. I like to aim for the lamb to be cooked through but slightly pink in the middle.

Recipe Notes

Serve with dauphinois potatoes and green beans.
