Legs of lamb vary in size. I have put that this recipe serves 6 but a massive leg of lamb it may do more. Leftovers can be turned into an easy Shepherd's Pie.
- Chop the onion & lavender flowers finely, combine with other marinade ingredients. (I stick it all in the food processor).
- Spread marinade over both sides of the butterflied leg of lamb and leave to marinate for at least 4 hours or overnight preferably.
- You can cook this on the bbq, or put in the oven at 220 deg C / fan oven 200 deg C and cook it for around 15 minutes per pound (or per 450g).
- I like to aim for the lamb to be cooked through but slightly pink in the middle.
Serve with dauphinois potatoes and green beans.
