Watercress pesto


  1. Discard any really thick or tough stems from the watercress and herbs.
  2. Put everything in a blender and whizz till smooth.
  3. Add extra olive oil for a thinner consistency.
  4. Boom! Dollop this funky fresh pesto on everything.

Recipe Notes

  • Spoon on your salmon, stir through your pasta or garnish barbecued lamb for a sensationally seasonal sauce.
  • Freeze into smaller portions so you can enjoy it over a few meals.
